Chicken Fajitas
Place
in chicken breast, 1 c. peppers and onion, 1 t. cumin in crock pot
with a little veg. oil, place on low for 5 – 8 hours. Take out
chicken and chop before serving on two flour tortillas with grated
cheese.
Quesadillas
Butter
two flour tortillas (or put a little veg. oil in pan), place one
butter side down in frying pan, add grated cheese (may sprinkle with
cumin), add second tortilla. Turn half way through cooking. Serve
with boiled or steamed vegetables.
Chicken Tortilla Soup
Place 1 chicken breast, 1 c. peppers with onions, 2 boullion cubes, 2
c. water, and two tortillas that have been slice into ½ wide ribbons
in the crockpot. Cook on low 5 – 8 hours.
Rice with Beans and
Veggies
½ c. rice
¼ c. beans
2 c. water
¼ c. one vegetable
¼ c. another vegetables
¼ c. onions with peppers
Cook on low 5 – 8 hours. Add salt and pepper before eating.
(adding salt too early can prevent dried beans from getting soft.)
Chicken and Rice
Casserole
1 chicken breast (cut up in cubes)
½ c. frozen vegetables
½ c. rice
½ t. salt
pepper
1 c. water
1 can cream of chicken soup
Place in crock pot, stir, put on low for 5 – 8 hours.
Bar B Q Chicken
Place chicken breast in crock pot with half a bottle of bar b q
sauce. Cook on low 5 – 8 hours. Serve with heated leftover
veggies for side.
